What Pizza Should I Make at Home? A Decision Guide (+ AI Tool)

Published: 2026-04-20 | 11

You're standing in front of the fridge. It's 5pm. You've got stuff. What pizza do you make? This is the single most-asked question in my DMs. Here's the decision guide I'd text my sister if she asked, plus an AI-powered scanner below that'll pick a specific recipe based on whatever you upload or type in.

The 3-question decision tree

If you want to skip the AI and just reason it out yourself, these three questions get you to the right pizza 90% of the time.

1. How much time do you have?

2. What flour do you have?

3. How hot does your oven get?

Common scenarios, instant answers

"I have fresh mozzarella about to expire."

Make a Neapolitan or a white pie with ricotta + fresh mozz. Fresh mozz wants to be used fresh. Drain it on paper towels 10 minutes before building, or it'll soak your crust.

"I have sausage and giardiniera."

Chicago tavern pizza. The classic. Full recipe at /articles/chicago-tavern-sausage-giardiniera.

"I have pepperoni, jalapeños, and hot honey."

You basically already decided, make the bar pie. See /articles/pepperoni-jalapeno-hot-honey-bar-pie for the full method.

"Friends are coming over in an hour."

Bar pie. Mix the dough now, rise 2 hours while you hang out, bake in 10 minutes. Party cut in squares. Done.

"I only have cheese and sauce. No toppings."

Make the best plain cheese pizza you can. 72-hour cold ferment, three-cheese blend (low-moisture mozz + fresh mozz + a touch of fontina). I wrote a whole piece on this, /blog/best-cheese-pizza-at-home.

"I want to impress someone."

Vodka Sauce Sicilian with burrata dollops. Square pie, dramatic, technically challenging enough to look serious but approachable enough to actually nail. /recipes/vodka-sauce-sicilian.

When to skip the AI and just pick

The scanner above is for when you're genuinely unsure. But if you know what you want, just make it. Don't overthink pizza. Start with one style, learn it cold, then expand.

My suggestion for beginners: spend four weekends making only the NY slice. By week four you'll understand what hydration, ferment, and heat actually do, and every other style becomes easy to learn.

Frequently asked

What's the easiest pizza for a complete beginner?

Bar pie. Same-day dough (no ferment), low hydration that's easy to handle, baked in a pan so stretching doesn't matter. If you've never made pizza before, start there.

What's the impressive pizza that doesn't take 72 hours?

Grandma pie. Overnight ferment, square pan, rustic uncooked sauce on top of cheese. Looks and tastes way more complex than it is to make.

I only have pre-shredded mozzarella. Can I still make good pizza?

You can, but it won't melt properly, the anti-caking coating prevents clean melt and browning. If at all possible, buy a block and shred it yourself. Takes 60 seconds.

What if the AI scanner recommends something I don't have ingredients for?

Read what it suggested, then substitute. The scanner tells you the style to make, ingredients are flexible. Low-moisture mozz and fresh mozz are interchangeable for most purposes (fresh needs to drain first).
