A Caesar salad is a great sandwich waiting for permission. This is that sandwich: crispy fried chicken cutlets, romaine tossed in a from-scratch Caesar (real anchovies, worcestershire, dijon, a full half-cup of Parmigiano), crushed croutons for crunch, and lemon zest to lift it.
The dressing is a two-minute blender job, just don't run it long or the mayo base whips and stiffens. Pound the tenders thin, three-station breading (flour, lemony egg, panko-breadcrumb-parm), and fry to deep golden.
Build order matters: dressing on the bottom, cutlets, dressed salad, then MORE dressing, crushed croutons, zest, Reggiano. Hinge-cut the roll, pick out a little top crumb for room, and roll the finished sub in parchment for a few minutes so it melds. My hoagie roll is the right bread for this.

Directions
- Start with a good 12 inch bread roll. I recommend making it fresh with the recipe on my page, but you can grab a fresh roll from the store too.
- Making the chicken Cutlets
- Heat up oil in your pan. I add enough oil to about a half inch height in the pan.
- Set up your breading stations.
- Put your flour in the first bowl. Scramble the egg with lemon juice in the second bowl. Mix the panko, bread crumbs and parmigiana in the third bowl. Parmigiano Reggiano
You'll know it's right: Three stations: flour, egg whisked with lemon juice, and the crumb mix. Wet hand for wet, dry hand for dry, or your fingers become the fourth station.
- Pound the chicken tenders as thin as you can.
You'll know it's right: Pound the tenders thin and even, thin cutlets fry fast and stay tender under the salad.
- Salt and pepper both sides.
- Dip each piece of chicken in the flour first, egg second, and crumbs third.
- Fry each side until golden brown. Usually 3-5 minutes on each side depending on your oil heat.
You'll know it's right: Golden brown at 3-5 minutes per side. If it's browning in 90 seconds, the oil is too hot for the chicken to cook through.
- Lightly salt the chicken one more time and set aside to rest.
- Finely chop your Romaine lettuce. You only need 1-1.5 cups.
- Add all other ingredients to a blender and pulse until smooth. Make sure not to go too long because it will incorporate a lot of air. Alternatively, you can mix with a whisk and use anchovy paste instead. 2 garlic cloves, 2 anchovies, ½ lemon (squeezed), 1 tsp dijon mustard, 1 tsp worcestershire sauce, 1 cup mayo, ½ cup grated Parmigiano Reggiano, salt, pepper
You'll know it's right: Pulse the dressing just until smooth. Long blending whips the mayo and turns silky into stiff.
- Toss about 1/4 of a cup of the dressing with the lettuce and set the rest aside for later. Constructing the Sandwich
- Give the bread a "hinge" cut. Basically butterflying the bread and opening it without slicing all the way through.
You'll know it's right: The hinge cut: slice almost through, leave the spine. The roll opens like a book and holds everything in.
- Lightly pick out some extra breading on the top to make more room for filling.
- First, add a healthy layer of the extra Caesar Dressing on the bottom.
- Add a layer of the chicken cutlets.
- Scoop on your salad, and honestly add more dressing probably. There's a lot of bread/ breading, so the dressing helps.
- Crush your croutons and sprinkle on top.
- Add lemon zest and Parmigiano Reggiano.
- Roll in parchment paper to meld everything together.
You'll know it's right: The parchment roll-up isn't garnish, five minutes wrapped melds the layers so it eats as one sandwich.
- Slice in half and enjoy!
Troubleshooting
Dressing was stiff like mayo
Blended too long. Pulse to smooth and stop. It thins slightly with the lemon; it should ribbon, not hold peaks.
Cutlets went soggy under the salad
Under-fried or built too early. Deep golden crust, rest on a rack, and build the sub right before eating. The parchment meld is minutes, not hours.
Fishy dressing
Whole anchovies half-blended. Two anchovies fully blended disappear into savory depth. Chunks read fishy, blend completely.
Sandwich fell apart
Cut clean through the roll. Hinge cut. The spine is structural.
Bland
Skimped the dressing. This sandwich carries a lot of bread and breading. More dressing than feels polite is correct, the recipe says so itself.
