Corn on pizza is a global normal, Korea, Japan, Brazil all know, and this pie is the argument for it. Sweet corn kernels, jammy caramelized onions, and gochujang, the fermented Korean chile paste that brings sweet-savory heat.
The base is heavy cream poured thin over the two mozzarellas, it bakes into a silky layer that carries the corn. The gochujang goes on in small spoon-dots across the surface, it's intense, and dots give you controlled bursts instead of a fire blanket.
Cut the kernels fresh off the cob, canned corn is wetter and sadder. And take the onions low and slow with butter and oil, rushed onions read raw against the sweet corn.
Ingredients
Ingredients
- 8 oz Fresh mozzarella
- 1 cup Shredded Low Moisture Mozzarella
- ¼ cup Heavy Cream
- 2 Corn Shucks
- ½ Onion
- Salt
- Pepper
Gochujang
- 1 tbsp butter
- 1 tbsp Olive Oil
- Parmigiano Reggiano
- Bread Flour
Directions
- Preheat your oven to 500 degrees for 45 minutes with your baking steel.
- Lightly dust your board or peel with flour, then gently stretch the dough. Bread Flour
- Add the shredded low-moisture mozzarella first, then scatter the torn fresh mozzarella over the top. 1 cup Shredded Low Moisture Mozzarella, 8 oz Fresh mozzarella
- Pour a thin layer of heavy cream over the dough as the base. ¼ cup Heavy Cream
You'll know it's right: A thin pour of cream, it should film the surface, not pool. It bakes into the silk that ties corn to cheese.
- Prepare corn. Dehusk the corn and stand it upright on a cutting board. Use a large kitchen knife to slice off the kernels. Scatter the corn evenly over the stretched dough. 2 Corn Shucks
You'll know it's right: Stand the cob upright and slice down, fresh kernels have snap and sweetness canned corn lost in the brine.
- Slice the onions lengthwise into thin strips. Cook them in a pan over LOW/medium heat with a little oil and butter, stirring occasionally, until deep golden and caramelized. Spoon the caramelized onions evenly over the stretched dough. ½ Onion , 1 tbsp Olive Oil, 1 tbsp butter
You'll know it's right: Low and slow with butter and oil, stirring, until golden and jammy. Browning fast on high heat is not caramelizing.
- Add salt and pepper to your liking. Salt, Pepper
- Dot small amounts of gochujang across the surface using a spoon. Gochujang
You'll know it's right: Small dots of gochujang, pea-to-marble sized, spread out. It blooms in the oven, a little covers a lot.
- Drizzle with EVOO around the edges of your crust. 1 tbsp Olive Oil
You'll know it's right: Pull at golden crust with the corn just catching color at the tips.
- Bake in your preheated oven for 8 minutes. Add an additional minute of broil if you like char.
- Garnish with as much Parm as you’d like! Enjoy! Parmigiano Reggiano
Troubleshooting
Gochujang took over the pie
Spread it like sauce. Dots. Small ones, spaced. It's a condiment-strength paste, not a base layer.
Watery pizza
Canned corn. Fresh kernels off the cob. If you must use frozen, thaw and pat completely dry.
Onions tasted sharp
Rushed on high heat. Low/medium flame, butter and oil, stirred, until jammy. There is no fast version of caramelized onions.
Cream made it soggy
Poured heavy. A quarter cup filmed thin. It's a base note, not a soup.
Flavors felt disconnected
Skipped a component. This pie is a three-way balance, corn sweetness, onion depth, gochujang heat. All three or pick a different pizza.
