Vodka Roni
Cheese and pepperoni baked first, warm vodka sauce dolloped on after. The upside-down roni pie.

This pie flips the usual order: no sauce goes into the oven at all. You bake a cheese-and-pepperoni pizza, then dollop warm vodka sauce over the sliced pie.
Why? Because vodka sauce is a finished, creamy sauce, baking it at 550°F breaks it, dries it, and dulls the tang. Applied warm at the end, it stays silky and bright, and the cheese underneath stays crisp where the pepperoni rendered into it.
Make the vodka sauce first (or pull it from your fridge stash, it keeps a week). Dollops, fresh cracked pepper, and a snowfall of Reggiano. Done.
Ingredients
- 2 cups shredded low moisture whole milk mozzarella cheese
- ½ fresh mozzarella ball
- 2 cups pepperoni
- olive oil
- pepper
- Parmigiano Reggiano
Directions
- Preheat your oven to 500-550 degrees on the convection setting for an hour.
- Make your vodka sauce. See attached sub-recipe.
You'll know it's right: The vodka sauce should be warm and loose when the pizza comes out, make it first or reheat gently with a splash of cream.
- Stretch dough to 14-16 inches. I used the attached recipe, however, you can use whatever recipe you'd like.
- Evenly spread both cheeses.
You'll know it's right: Both cheeses edge to edge minus the rim, they're the foundation the sauce lands on later.
- Evenly spread your pepperonis.
- optional: add a drizzle of olive oil around the crust for a deeper color.
- Launch pizza into the oven on your stone or steel and bake for 8 minutes. Additional 1 minute broil if you like char.
You'll know it's right: Bake until the pepperoni cups are crisp-edged with rendered fat pooled inside, that's the 8-minute mark on a proper steel.
- Remove from the oven and place on a cooling rack for 2 minutes.
- Optional olive oil drizzle around the crust. Then slice your pizza.
- Last, add healthy dollops of warm vodka sauce all over the pizza. And fresh ground pepper. Parmigiano Reggiano
You'll know it's right: Dollops on the SLICED pie, spaced so every slice gets two or three. Spreading it defeats the contrast.
- Finish with grated reggiano. enjoy!
Troubleshooting
Sauce broke and looked greasy
Baked the vodka sauce on the pie. It never sees the oven. Warm dollops on the finished pie, that's the recipe.
Sauce slid off the slices
Dolloped onto an unrested, unsliced pie. Rest 2 minutes, slice, then dollop. The set cheese gives the sauce something to grip.
Pepperoni was flat and greasy
Wrong pepperoni. Cup-and-char natural casing only. The cups are little flavor bowls, flat roni is a different food.
Cold sauce on hot pizza
Sauce sat while the pizza baked. Keep it on the lowest burner or reheat with a splash of cream right before the pie comes out.
Overall too heavy
Over-sauced. Two to three dollops per slice. This is an accent application, not a flood.
